Kacche doodh ki lassi is a traditional milk-based beverage lauded for its cooling properties and potential health benefits, said Priya Bharma, chief nutritionist at Sri Balaji Action Medical Institute. For the unversed, kacche doodh ki lassi is nothing but raw milk mixed with an equal proportion of cold water and sweetened with sugar or honey. According to Bharma, it helps fight heat issues by hydrating the body and replenishing lost electrolytes.

The recipe is very simple but the benefits are many. It is used to neutralise the heat of the liver and bladder, and also helps ease the burning sensation during and after urination,” said Singh.

Both provide calcium and protein, but curd lassi offers added benefits from probiotics and lower lactose, said Bharma. “Generally, curd lassi is considered better for digestion and safety. Curd lassi, made from fermented milk, is rich in probiotics, aiding digestion and gut health. It also has a lower lactose content due to fermentation, making it easier to digest for those with lactose intolerance. Raw milk lassi, while rich in vitamins and minerals, carries risks due to potential pathogens if not properly handled,” she explained.

Method

*Whisk raw milk with cold water multiple times along with the sweetener of choice. It resembles a traditional lassi or thickened buttermilk.

Consuming raw milk poses risks of bacterial infections like E. coli and Salmonella, necessitating careful sourcing from reliable, hygienic providers, cautioned Bharma. “While beneficial for heat prevention and weight management, the safety concerns of raw milk consumption must be carefully considered,” she added.

Also, it is crucial to ensure that raw milk comes from a reputable source that follows strict hygiene and safety standards. Pregnant women, young children, the elderly, and individuals with compromised immune systems are generally advised to avoid raw milk products, noted Bharma.
